Mix 6 cups warm water, 1 rounded Tbsp salt, 2/3 cup honey, 2/3 cup oil. in large bowl. Using a wire whip, mix in 3 cups whole wheat four, 3 Tbsp instant yeast, 1/3 to 1/2 cup gluten and 2/3 cup whey or powdered milk. Mix in 5 more cups whole wheat flour and let rest for 5 to 10 minutes. Mix in 5-7 more cups whole wheat flour and knead. Let rise until double. Shape into 5 loaves and rise again. Make sure to grease bread pans. Bake at 350 degrees for 30-35 minutes.
